“ I was always a bit nuts as a kid , ” says Beth Conrey as she looks back on her journeying to becoming the owner and beekeeper of the Berthoud , Colorado - basedBee Squared . “ I collected louse for years while I participated in 4 - H. ”

After a detour working in corporal America , Conrey weave up refund to the Earth of worm after reading a chromatography column in the local Berthoud Recorder newspaper by a honey farm owner named Tom Theobald .

“ He was a beautiful author on many fronts but particularly on his love of bee , ” says Conrey . “ He triggered my interest , and for that I shall be everlastingly thankful . ”

We spoke to Conrey about how to reach settlement success and her company ’s   prize - bring home the bacon fennel pollen honey . We also touched on the potential for bees to do math .

Brainstorming Fennel Pollen Honey

Bee Squared ’s common fennel pollen beloved of late won an award at the Good Food Awards . Conrey say that the idea for the honey came from her old boss , Bob Patrick .

“ He has always had a wonderful roof of the mouth , and he began work with me on different flavor profile for infusion , ” she excuse . “ He put together common fennel pollen and honey . I jazz he had a winner as shortly as I tasted it . The taste is interactive ! ”

Pork, Pistachios & Honey

When it come to recommended uses for common fennel pollen beloved , Conrey plumps for pork as a first suggestion . “ I ’ve been making a porc tenderloin with sautéed fennel and the Florence fennel pollen dear . It is quite delicious , ” she says .

“ I have also been invest it on a pizza that I ’ve been modifying from a restaurant hollo Origins in Loveland , ” she retain . “ It has a pistachio cream sauce , Italian sausage , unused mozzarella and a few other ingredients . I drizzle the Florence fennel pollen honey on it , and it is delectable ! ”

Conrey adds that she ’s taken inspiration from chef Yotam Ottolenghi ’s conjugation of grilled grapes with burrata and worked some common fennel pollen honey into the portmanteau word . She also suggests it might be a “ fab ” addition to a noose - base cocktail .

Achieving Colony Success

“ In Colorado we have over 900 coinage of bee , ” says Conrey as she looks over her hives . “ I manage love bee , which differ from the rest of them because they are a colony insect .

“ All the rest of those bee are solitary and , thus , miss the ability to produce honey in quantity . The key fruit to settlement achiever is consensus and , as homo , we would do well to emulate it . ”

Conrey adds that each colony also displays its own personality . “ While they are not a pet , I do have favorites , ” she says . “ Most people do n’t think of bees as having personalities — but they do . ”
